Professor of many disciplines including Cancer Research, Cancer Medicine, Immunology, Biochemistry, Experimental Therapeutics and more. In 1989, Dr. Aggarwal was recruited as a Professor of Medicine and of Clinical Immunology, Chief of the Cytokine Research section at the University of Texas M.D. Anderson Cancer Center. Since then, Dr. Aggarwal has been investigating the “Role of Inflammatory Pathways Mediated through TNF, NF-KB and STAT3, for the Prevention and Therapy of Cancer and other Chronic Diseases.” While searching for novel and safe anti-inflammatory agents, his group has identified more than 50 novel compounds from dietary sources and from Traditional Medicine that interrupt these cell-signaling pathways. Neal Barnard is an Adjunct Associate Professor of Medicine at the George Washington University School of Medicine in Washington, D.C. Dr. Barnard has authored dozens of scientific publications as well as 15 books for lay readers. She was also in the committee to establish Taiwan’s National Vegetarian Dietary Guideline and has a special interest on diet’s impact on the environment.

Betty teaches nutrition through cooking and her infectious enthusiasm for bringing families together in the kitchen. She has developed many opportunities to expand vegetarian meals in the mainstream from her experience managing CBS Studios food service to her tailored cooking classes for Williams Sonoma, the Chef Betty summer program, and the SACHS clinic. She is a professor at Mt. San Antonio College and teaches Vegetarian Cuisine, Nutrition, and Public Health. Her hobby of writing has turned into published health articles in The Reader, the community section in the Los Angeles Times. In her town of Claremont, she is known best for her community work in founding the city’s largest neighborhood safety project and public partnership. Her academic breadth in nutrition includes a Bachelor’s Degree from Cal Poly Pomona where she graduated with great distinction as the Undergraduate Student Leader of the Year 2009. She completed her graduate work at Loma Linda University, School of Public Health, where she helped to establish the Edible Gardens for Claremont Unified School District. Currently, Ms. Crocker is a doctoral student with the Loma Linda Nutrition Department and is the recipient of the Graduate Vegetarian Research Scholarship.

Native to New Zealand, Dr. Fraser has devoted his life to researching diet and health. To note Dr. Fraser has extensively studied measurement error in nutritional epidemiology and has developed many methodological innovations that will be applied to the analyses of AHS-2. Following the untimely death of Dr. Roland Phillips, Dr. Fraser became director of the Adventist Health Study-1. In 2001 he was awarded a major multimillion dollar grant from the National Cancer Institute to establish a new nation-wide cohort of Seventh-day Adventists, which is now a reality, consisting of 96,000 subjects. This major project has at times employed more than 50 staff and faculty, and is now approaching the major analyses and publications that were originally planned. In addition to his research, Dr. Fraser continues to practice clinical cardiology at various facilities, including Loma Linda University Medical Center.

Professor Gibson, presently a Research Professor in Human Nutrition at the University of Otago, Dunedin, New Zealand, graduated with a B.Sc in Nutrition from Queen Elizabeth College, London, in 1962. This was followed by graduate work in public health nutrition at UCLA. She then worked for three years as a Nutritional Biochemist at the Ethio-Swedish Nutrition Unit, Addis Ababa, Ethiopia. After teaching in the United Kingdom, she was awarded her PhD from the University of London for work on zinc in premature infants – a study that initiated a life-long interest in micro-nutrient human nutrition. In 1979, Prof. Gibson moved to Canada to the University of Guelph, Ontario and became Full Professor in 1985. In Canada she worked with a talented group of graduate students to raise the profile of trace-elements in human nutrition, concentrating particularly on zinc. She helped establish the presence of sub-optimal zinc status in some Ontario School children and demonstrated the importance of phytate as a factor inhibiting zinc absorption. For the last twenty years, Prof. Gibson has worked on micro-nutrient nutrition in Ethiopia, Mongolia and Brazil, emphasizing sustainable diet-based strategies to combat micro-nutrient deficiencies. This work in developing countries has continued since moving to New Zealand. After her departure from Canada at the end of 1995, she was awarded the McHenry Award from the Canadian Society for Nutritional Sciences in recognition of her contribution to nutrition research in Canada. In 2002, Prof. Gibson was elected to Fellowship of the Royal Society of New Zealand, and in 2007 was elected a Fellow of the American Institute of Nutrition. She is the author of a standard reference text on Nutritional Assessment published by Oxford University Press in New York in March 2005.

Dr. Haddad completed her doctoral degree at Loma Linda University in 1979. Moving to Lebanon, she taught at both Middle East College and the American University of Beirut. She is currently an Associate Professor in the Department of Nutrition at the School of Public Health, Loma Linda University—a position she has held since 1989. She is the coordinator of the Master of Public Health (MPH) program in nutrition and in nutrition and dietetics. In addition, Dr. Haddad is the resident nutritional biochemist for the department and has been instrumental in conducting the laboratory research for many of the department’s feeding trials, training students in biochemical analysis techniques. Dr. Haddad is also supervising the laboratory work for sub-studies of the Adventist Health Study-2, a cohort study of approximately 100,000 Seventh-day Adventist participants.

Dr. Harris is currently a Research Professor of Medicine at the Sanford School of Medicine, University of South Dakota in Sioux Falls. Over the last 32 years, Dr. Harris’ research has focused primarily on omega-3 fatty acids and cardiovascular disease. He has been the principal investigator on 5 omega-3 related NIH grants and currently has over 100 omega-3 related publications. Dr. Harris was a co-author of the American Heart Association’s 2002 scientific statement, “Fish Consumption, Fish Oil, Omega-3 Fatty Acids and Cardiovascular Disease” published in the journal Circulation. More recently, he has begun to evaluate the “omega-3 index” (erythrocyte EPA + DHA) as a possible new risk factor for cardiovascular (and perhaps neurocognitive) disorders. In 2009 he founded a company, OmegaQuant Analystics, LLC, to offer the test to researchers, and in 2011 the omega-3 index test was acquired by Health Diagnostic Laboratory, Inc. where it is now available clinically.

Dr. Hodis is the Harry J. Bauer and Dorothy Bauer Rawlins Professor of Cardiology, Professor of Medicine and Preventative Medicine, Molecular Pharmacology and Toxicology as well as Director of the Atherosclerosis Research Unit at the University of Southern California. Dr. Hodis has been continually funded by the NIH for more than two decades. His overarching research interest is in the area of vascular disease and atherobiology with investigative pursuits to understand the biology and genetics of the etiology and progression of the disease processes including prevention and intervention. Because vascular disease is an aging process affected by many conditions, Dr. Hodis’ approach included integrative biology involving the study of a broad array of conditions and disease processes that converge either as a cause of or result of atherosclerosis and cardiovascular disease such as diabetes, insulin resistance, cancer HIV/AIDS, cognition and Alzheimer’s disease, obesity, environment (e.g. pollution), inflammation and infection. His research entails a strong interest in the endocrine aspects of vascular disease including insulin, estrogen and testosterone actions in both men and women. Dr. Hodis has been the recipient of numerous awards including Outstanding Teaching Awards, the NAMS Thomas Clarkson Outstanding Clinical and Basic Science Research Award, the National Aeronautics and Space Administration (NASA) Inventions and Contributions Board Space Act Award and induction into the Association of American Physicians (AAP). Dr. Hodis has delivered more than 250 invited presentations worldwide and authored or co-authored more than 150 original scientific publications.

Cyril WC Kendall, Ph.D. is a Research Associate in the Department of Nutritional Sciences, Faculty of Medicine, University of Toronto, and the Clinical Nutrition and Risk Factor Modification Center, St. Michael's Hospital and an Adjunct Professor in the Department of Pharmacy, College of Pharmacy and Nutrition at the University of Saskatchewan. He was educated at the University of Toronto, where he obtained his Honors BSc and graduate degrees, MSc and PhD. During his post-doctoral studies he conducted research and received training at: Purdue University and the Children’s Hospital Medical Center in Cincinnati. Dr. Kendall has over 120 publications in peer-reviewed medical journals and has been invited to present at numerous international conferences. His studies on combining cholesterol lowering food components (dietary portfolio) have been recognized as creating an effective dietary alternative to drug therapy (statins) for many people and were the only dietary approach referenced in the Current Guidelines of the US National Cholesterol Education Program (ATP III). He has also conducted much research on the role of healthy diets, including low glycemic index diets, in the control of type 2 diabetes. Dr. Tim Key is Professor of Epidemiology and Deputy Director of the Cancer Epidemiology Unit at the University of Oxford, UK. His main interests are the roles of diet and hormones in the aetiology of cancer, and the health status of vegetarians and vegans. His research has clarified the importance of oestrogen in the aetiology of breast cancer and the role of insulin-like growth factors in the development of both breast and prostate cancer. His group has also shown that vegetarians have a lower risk of heart disease than meat-eaters. He works mostly on the European Prospective Investigation into Cancer and Nutrition (EPIC), as the principal investigator of the Oxford cohort of 60,000 subjects, including 30,000 people who don’t eat meat. Dr. Messina is the co-owner of Nutrition Matters, Inc., a nutrition consulting company, an adjunct associate professor at Loma Linda University, and the Executive Director of the Soy Nutrition Institute. He is a former program director with the National Cancer Institute (NCI) and while at the NCI he initiated a multi-million dollar research program on the anticancer effects of soy. Since leaving the NCI, Dr. Messina has devoted his time to the study of the health effects of soyfoods and soybean isoflavones. He writes extensively on these subjects, having published more than 65 articles and book chapters for health professionals, and has given more than 500 presentations to both consumer and professional groups in 44 countries. Along with being a registered dietitian, Virginia Messina writes about vegetarian and vegan diets for the public and health professionals. She is a founding member of the Vegetarian Nutrition Dietetic Practice Group of the Academy of Nutrition and Dietetics and serves on the group’s newsletter editorial board. She has twice co-authored the Academy of Nutrition and Dietetics’ Position on Vegetarian Diets. Ginny is co-author of Vegan for Life, and of the first vegetarian textbook for health professionals The Dietitian’s Guide to Vegetarian Diets, now in its third edition. Prior to focusing her efforts on vegan nutrition, she was on the faculty of Central Michigan University, where she taught courses on general nutrition, lifecycle nutrition, and nutrition education to dietetics students. She also has a past working with the Physicians Committee for Responsible Medicine, and was director of nutrition services for George Washington University Medical Center in Washington, D.C.

Dr. Pribis is a native of Slovakia, a small country in central Europe. In 1996 he graduated from Loma Linda University, School of Public Health with DrPH in nutrition and epidemiology. After graduation he worked as nutritional epidemiologist for the Adventist Health Study. He returned to Czech Republic in 1997 and worked as medical advisor and health consultant to several health promoting institutions. In 2000, he moved to Germany where he worked as health director responsible for health ministry at both German unions. Since 2004 he works as Associate Professor of Nutrition and Wellness at the Nutrition and Wellness Department at Andrews University. He is an enthusiastic speaker about the benefits of healthy lifestyle and promoter of evidence based lifestyle medicine. He conducts research in the area of nuts, vegetarian lifestyle and omega-3 fatty acids. He publishes in peer reviewed journals and serves as reviewer and editorial board member of several magazines.

RajaramSujatha Rajaram, PhD | ABSTRACT

Dr. Rajaram comes to Loma Linda University by way of her native country India. She completed her undergraduate work at Madras University in India and obtained her master of science degree from Home Science University in Coimbatore, India. She received a Research Assistantship from Purdue University, West Lafayette, Indiana where she obtained her PhD in Foods and Nutrition. She was able to gain considerable teaching and research experience during her doctoral program and went on to a post doctoral fellowship at the University of Tennessee, Memphis, TN. In 1994 she came to Loma Linda University where she is currently an Associate Professor in the Department of Nutrition and Director of the doctoral program in nutrition. In addition to her teaching and administrative duties, Dr. Rajaram has a significant role in the research activities of the department. She was the co-principle investigator of the feeding study comparing the effects of walnuts and fish on blood lipids and fatty acids, and co-investigator in two other nut feeding studies on almonds and pecans. She served on the Scientific Committee of the 4th (co-chair) and 5th (chair) International Congress on Vegetarian Nutrition, held in 2002 and 2008, respectively.

RossSharon Ross, PhD, MPH | ABSTRACT

Dr. Sharon Ross is a Program Director in the Nutritional Science Research Group, Division of Cancer Prevention, National Cancer Institute, National Institutes of Health. In this capacity, she is responsible for directing, coordinating and managing a multi-disciplinary research grant portfolio in diet, nutrition, and cancer prevention. Topics in her portfolio and research interests include: molecular approaches to diet and pancreatic cancer; diet, epigenetic events, and cancer prevention; nutrition and nanotechnology; as well as diet, obesity and cancer risk. Dr. Ross has a PhD in Nutritional Sciences from the University of Maryland, College Park and a Masters of Public Health from Johns Hopkins University School of Public Health with an emphasis in Epidemiology. Prior to joining the NCI, Dr. Ross worked at the Center for Food Safety and Applied Nutrition, Food and Drug Administration (FDA). At FDA, she was involved in scientific review and regulation development for health claim labeling. Before FDA, Dr. Ross was a Cancer Prevention Fellow in the Division of Cancer Prevention and Control, NCI. Sharon did her doctoral dissertation research in the Laboratory of Cellular Carcinogenesis and Tumor Promotion at NCI where her research topic concerned the effects of retinoids in growth, differentiation, and cell adhesion. Dr. Ross also holds a MS in Nutritional Sciences from the University of Connecticut and a BS in Nutrition and Dietetics from the University of New Hampshire.

SabateJoan Sabaté, MD, PhD | ABSTRACT

Dr. Sabaté served as principal investigator in a nutrition research study that directly linked the consumption of walnuts to significant reductions in serum cholesterol. His findings were published in the New England Journal of Medicine in 1993 and received the attention of more than 400 media sources, both national and international. Bringing the research full circle Archives of Internal Medicine has recently published the findings of his pooled analysis of 25 intervention trials establishing the benefits of nut consumption on blood lipid levels and lowering the risk of heart disease. Dr. Sabaté continues to research the relationship of almonds, pecans, and walnuts to heart disease risk factors. He has served as a co-investigator of the Adventist Health Study, a cohort study of nearly 60,000 Seventh-day Adventists and the relationships between their diets and various diseases and is currently a co-investigator of the Adventist Health Study-2, which enrolled 96,000 Seventh-day Adventists. He has conducted considerable research in the area of vegetarian nutrition, is editor of the book Vegetarian Nutrition published in 2001, and was the principal architect of the Vegetarian Food Guide Pyramid released in 1997 at the 3rd International Congress on Vegetarian Nutrition and redesigned in 2008. Dr. Sabate has sat as chair of the International Congress on Vegetarian Nutrition for the past 3 editions and co-chair of the 3rd, he is an invaluable influence in helping establish the scientific evidence of the health benefits of vegetarian diets.

He has occupied teaching and research posts at the Faculty of Medicine in Rues since 1984. At present, he is professor of Nutrition and Bromatology and director of the Human Nutrition Unit of the Faculty of Medicine of the Rovira I Virgili University. He has occupied a variety of medical posts at the Sant Joan University Hospital, Rues. Since 1991, being the director of Nutrition of the Internal Medical Service. The Human Nutrition Unit of which he is director is part of: a)Catalan Centre for Nutrition of the Institute of Catalan Studies; b) Thematic Network of Mediterranean Diet and Cardiovascular Diseases(G03/140), and c) RETIC RD06/0045 Health Diet in the Primary Prevention of Chronic Diseases” the PREDIMED network, recognized by the Instituto Carlos III. Since 2001, he has been directing the URV research group “Diet, Nutrition, Growth and Mental Heath”. In 2008, the Group became a full member of CIBERobn ‘Obesity and Nutrition’. This CIBER gathers the leading Spanish research groups in the areas of nutrition and obesity. Among its most important lines of research, the following should be mentioned: Study of the diet of different populations; Effect of the Mediterranean diet on cardiovascular diseases; Effect of glycemic index on body weight; Inflammation and endothelial function; and Satiety control through food structures made by novel processing. He has directed 12 research projects financed by public bodies and 20 projects in conjunction with the pharmaceutical or food industries. He has also taken part as co-researcher in other projects funded by public bodies. He has published more than 200 original articles in national and international journals as well as numerous reviews and editorials. Editor of 5 books, he has also co-authored more than 65 books.

SandersThomas Sanders, PhD, DSc | ABSTRACT

Tom Sanders obtained his degrees from the University of London and was appointed Professor of Nutrition and Dietetics at King's College London in 1994 and is currently Head of the Diabetes & Nutritional Sciences Division, School of Medicine, King’s College London. His research has focused on the health aspects of dietary fats particularly in relation to cardiovascular disease and type 2 diabetes. He has been principal investigator of a number of large randomized controlled trials that involve lipid manipulation inkling those in relation to insulin sensitivity (OPTILIP, RISCK). He was a member of the recent WHO/FAO on the role of fats and fatty acids in human nutrition. Much of his early research was involved with omega-3 fatty acid and their role in nutrition. Working with George Miller, he demonstrated some marked effects on the activation of clotting factor VII following meals high in fat. He has conducted a number of studies investigating the effect of fatty acid chain length on haemostatic function and postprandial. His recent work has been focused on the effects of dietary fats on endothelial function and arterial stiffness.

SanGiovanniJohn Paul SanGiovanni, ScD | ABSTRACT

Dr. John Paul SanGiovanni is a Staff Scientist in the Clinical Trials Branch at the National Eye Institute. His primary research interest is in examining the relationship of long-chain polyunsaturated fatty acids and bioactive molecules with pathogenic factors and processes implicated in retinal vascular diseases. He serves as Project Officer and leader of analysis teams for Age-Related Eye Disease Study (AREDS) and AREDS2 in projects examining the relationship of dietary factors with age-related macular degeneration. He is conducting large-scale genomic studies on the role of mitochondria in pathogenesis of age-related macular degeneration and mechanistic studies on diet and retinal angiogenesis in a number of animal models. Dr. SanGiovanni participated as a technical expert for a numerous government-directed projects,(Agency for Healthcare Research and Quality and the National Center for Complementary and Alternative Medicine). He chaired the Members in Training Committee at the Association for Research in Vision Science and Ophthalmology. Prior to his appointment at NEI in 2000, Dr. SanGiovanni held positions at the International Nutrition Foundation and United Nations University.

Shukitt-HaleBarbara Shukitt-Hale, PhD | ABSTRACT

Dr. Barbara Shukitt-Hale is the USDA Lead Scientist in the Laboratory of Neuroscience, USDA-ARS, Human Nutrition Research Center on Aging (HNRCA) at Tufts University in Boston, MA. She received her Ph.D. in Experimental Psychology from Boston University in 1993. Dr. Shukitt-Hale has been involved in research for 30 years. Her current work involves determining the factors responsible for age-related behavioral and neurochemical changes and possible amelioration of these effects with various nutritional treatments. She has published more than 170 articles and selected papers.

Dr. Singh is the Director for the Center for Health Research at Loma Linda University and an Associate Professor of Epidemiology and Global Health. During the past decade, his research has focused on the study and measurement of lifestyle exposures (diet, tobacco, physical activity) in population-based studies in the U.S. and Asia. On the Adventist Health Studies, he has authored or co-authored a number of reports on the vegetarian diet, body mass index, and health outcomes, and is currently expanding the work to multiethnic samples.

Mrs. Thieme is the founder and party leader of the Party for the Animals. While studying law at the Erasmus University in Rotterdam, she recognized a void in animal rights legislation. Her personal interest in animal protection quickly developed into a professional one. Marianne Thieme set up the Party for the Animals in 2002 with Lieke Keller and Ton Dekker and in 2006 was elected to the House of Representatives in the Netherlands. Mrs. Thieme has received high regards for her documentaries Meat the Truth and Sea the Truth which respectively take an in depth look at the reality behind the food industry. A vegetarian, Mrs. Thieme is also the author of the book The Century of the Animal.

Dr. Tucker is a professor of nutritional epidemiology in the Department of Health Science and Bouve College of Health Sciences at Northeastern University. Prior to joining Northeastern University in December 2009, Dr. Tucker served as Senior Scientist and Director of the Dietary Assessment and Epidemiology Research Program at the Jean Mayer USDA Human Nutrition Research Center on Aging at Tufts University and Professor and Director of the Graduate Program in Nutritional Epidemiology at the Friedman School of Nutrition Science and Policy at Tufts University. Dr. Tucker’s research focuses on dietary intake and risk of chronic disease, including obesity, osteoporosis, cognitive function, metabolic syndrome, and heart disease, with a special emphasis on health disparities and high risk populations. She has contributed to more than 250 articles in scientific journals, has authored several book chapters and has presented over 130 invited talks and presentations. She is one of five editors of the 11th edition of the well known textbook “Modern Nutrition in Health and Disease,” currently in press. She is the director of the Boston Puerto Rican Health Study, and NIH funded Center for Population Health and Health Disparities, studying the roles and interactions of stress, social support, diet, health behavior and genetic predisposition in relation to health disparities in Puerto Rican adults. She is the past chair of the Nutritional Sciences Council at the American Society for Nutrition, and served as an associate editor for the Journal of Nutrition for 8 years.

WongJulia Wong, PhD, RD | ABSTRACT

Dr. Julia Wong is a registered dietitian and postdoctoral research fellow at Boston Children’s Hospital and Harvard Medical School, supported by Canadian Institutes of Health Research (CIHR) RCT Mentored Training Grant. Her research focuses on novel dietary interventions for the prevention and treatment of obesity and its associated metabolic complications (i.e. CVD and type 2 diabetes), using innovative methodological designs and approaches. Currently, she is directing clinical trials examining the effect of 1) diets differing in macronutrient composition on the treatment of polycystic ovary syndrome, and 2) unsweetened non-caloric beverages on weight reduction. Dr. Wong’s doctoral work contributed to the understanding of the association between varying macronutrient composition on the intra-individual variability in soy isoflavone biotransformation and risk factors for CVD, which received the annual PhD Dissertation Award for the Most Outstanding Research at the 2010 Annual Canadian Nutrition Society Meeting. She has a strong track record of peer-reviewed publications and numerous research awards and recognitions for her oral and poster presentations at both international and national conferences.
